چکیده

Understanding the inactivation kinetics of bacterial spores during combined pressure-thermal processing is essential for process design. The knowledge on influence pH and water activity ( a w ) treatment limited. Experiments were conducted using Bacillus cereus suspended in citrate-phosphate buffers, adjusted to different levels (3.8–7.3) (0.80–0.99). Spores then treated with pressure-heat combination (600 MPa, 70 °C) laboratory-scale high-pressure kinetic tester. Linear regression Weibull models used fit experimental data. parameters estimated from plotted as function . Results showed that curves characterized by tailing, particularly at low levels. log reduction B. decreased decrease During treatment, changes acidity values given have limited decimal spores. Study findings will be helpful designing processes produce microbially safe products varying • Influence spore 600 MPa/70 °C was studied. Acidic condition enhanced lethality treatment. Inactivation pronounced tailing.

Purified tomato polygalacturonase activity during thermal and high-pressure treatment.

Extracted tomato polygalacturonase was purified by cation-exchange chromatography (and gel filtration) and characterized for molar mass, isoelectric point, as well as optimal pH for polygalacturonase activity. The enzymatic reaction of purified tomato polygalacturonase on polygalacturonic acid as substrate was investigated during a combined high-pressure/temperature treatment in a temperature r...

Proteomic profiling and identification of immunodominant spore antigens of Bacillus anthracis, Bacillus cereus, and Bacillus thuringiensis.

Differentially expressed and immunogenic spore proteins of the Bacillus cereus group of bacteria, which includes Bacillus anthracis, Bacillus cereus, and Bacillus thuringiensis, were identified. Comparative proteomic profiling of their spore proteins distinguished the three species from each other as well as the virulent from the avirulent strains. A total of 458 proteins encoded by 232 open re...

Bacillus spore inactivation methods affect detection assays.

Detection of biological weapons is a primary concern in force protection, treaty verification, and safeguarding civilian populations against domestic terrorism. One great concern is the detection of Bacillus anthracis, the causative agent of anthrax. Assays for detection in the laboratory often employ inactivated preparations of spores or nonpathogenic simulants. This study uses several common ...
